Have a Slice of Chocolate Mascarpone Cheese Pie!

..
Ever seen this stuff before? I came across this product at the supermarket the other day. It is a ready made chocolate cheesecake filling from the fine folks that make Philadelphia Brand cream cheese. Well, when I'm making a cheesecake, Philly is always the brand I reach for, so I guess that is good enough for me. I picked up a tub and took it home to see what it was all about. I have to say, it wasn't bad. In fact, it was pretty good. With a little doctoring up, it made a pretty darn tasty dessert!
..
Later that day, I was trying to figure out what to do with my new discovery. I decide to make you a little something to get you in a "chocolate" kind of mood so that you might think of me when casting your vote in Culinate's Death by Chocolate contest. (Now, you knew that was coming, didn't you?). Seriously, if you haven't already done so, please take a moment to click on over to Culinate and vote for your favorite entry in the contest. If not for me, then for one of the other fabulous food bloggers who have submitted such mouthwatering entries. By voting, you will also be entered in the contest yourself. There's nothing to lose but a few minutes of your time.

Anyway, I made you a Chocolate Mascarpone Cheese Pie. I made a chocolate cookie crust with chocolate wafer cookies and melted butter. Then, I added mascarpone cheese to the cheesecake filling to make it richer and smoother. To top finish it off, I topped the pie with strawberry Cool Whip. I loved the pretty pale pink color! It is perfect for Valentine's Day.
..
..
I hope you like it. It was the least I could do after bugging you so relentlessly about the contest!
..
Chocolate Mascarpone Cheese Pie
2 cups chocolate wafer cookies, crushed into crumbs
3 tablespoons melted butter
1 tub Philadelphia Brand chocolate cheesecake filling
1 8 ounce container of mascarpone cheese
1 tub strawberry Cool Whip
,,
Mix the cookie crumbs and melted butter together in a bowl. Press into a 9 inch pie plate. Chill for 30 minutes.
,,
In a large bowl, combine the cheesecake filling and mascarpone together, mixing well. Pour filling into the pie shell and smooth it out. Chill for at least 1 hour.
..
Top with Cool Whip, slice and serve.
..
Enjoy!

If I bought that stuff, I'd be eating it right out of the tub!! Yikes! Looks pretty :)
Have a slice of your pie? OK. But could you cut it kinda thick since I'd like to share it with Jeff? It's too scrumptious to eat all by myself.

Madeline- Thank you so much!

Tarah- Thanks! You absolutely could use low fat filling, and low fat cool whip, too.

Ryles- Shh. Don't tell anyone, but I did sneak a few spoonfuls.

Kirby- Thanks! Hard to believe how easy it was to make!

Recipegirl- Thank you! As I told Ryles, I did sneak some. I couldn't help myself! ;)

Susan- Absolutely! Jeff can even have a slice of his own! Glad you like it!

- Oh, it looks too dangerous for me! Everything I love: Mascarpone and chocolate.

Megan- Thanks! We can't be good all the time, now can we? ;)

Warda- Aw, go ahead...live dangerously! The Cool Whip is light.;)

Cakelaw- Glad you liked it. I only just saw this product in the stores here. Hopefully, you will get it soon. I'd send you some, but I think it would spoil before it got there.
