POMegranate Glazed Pork Tenderloin

Remember this?

pom-syrup2

Well, last night I used some to make this:

POM-pork2

It's a POMegranate Glazed Pork Tenderloin that I made using the leftover pomegranate syrup I made a few weeks ago with my POM Wonderful juice. Since I had already used the syrup to make some delicious ice cream, I wanted to try it in a savory recipe too. Pork marries well with so many different fruits, so I thought I'd try it with a pomegranate twist.

This dish was so ridiculously simple to prepare that I'm almost embarrassed to tell you about it. Except, that it was so darn tasty, it wouldn't be fair of me NOT to tell you about it.

First of all, you need to make some pomegranate syrup (or molasses as some have called it). You can find the recipe in my Pomegranate Chocolate Chunk Ice Cream post.

Then, salt and pepper your tenderloin and brown it on all sides in a hot skillet using a little olive oil.

After that, brush the pork with the syrup and roast it in a pre-heated 400 degree F. oven for about 10-15 minutes until it is cooked to your liking.

Let the meat rest for a few minutes, slice it up and DIG IN!

POM-pork1

THAT'S IT!

This sounds delicious, I love pomegranate but sometimes desserts with it are too sweet. This sounds like a great complement to pork tenderloin!

Thanks so much for your great comments! I'm thrilled that you like my pork tenderloins. I almost didn't post it because I kind of threw it together at the last minute, but now, I'm glad I did!

Kristen- You're sweet! I've been using the same camera (Canon Rebel XTi) for a little over a year. I think I've just learned how to use it a little better with practice. Also, I got a new, very sturdy tripod for Xmas. Now, I have a lot more control over my shots and my camera doesn't shake. It makes the photos much clearer. I still have a long way to go, though!

Your pork looks delicious and very juicy! I'm always worried when making my pork roast that it comes out dry. :0(

Yum! I love low-effort, high-impact food:) That POM syrup is versatile stuff!
This looks very good. I saw something similar(ish) on Good Eats last night, on the Food Network. I love any pork & fruit combination though, so I'm sure it would be good.
I have to go get some POM now. Never had this before. I should make this recipe. Looks so good.

Oh hooray! A quick and easy meal that I have all the ingredients for! It does sound ridiculous easy, but it also sounds so way delicious. Do you think this would work on chicken too?
Sometimes the simplest things are the best. All too often you see cooks (especially those on TV) dousing their food with 20 ingredients. All you need is one good standout ingredient that pairs well with what you're cooking andyou have a delectable recipe.

That pork looks so tender. I think you don't need a knife to cut it!

Astra Libris- I saw Alton Brown use this on lamb too. I'll bet it would be great!

Mary- I think it would be terrific on chicken. I'm planning to try that myself, as soon as I make more syrup.

Hi Susan, I saw that I have another follower. Woo Hoo, I could use another! I have been following you for a very long time, I love your blog. That Pom glaze looks amazing! I can't wait to make that. I buy that juice all the time in the summer. It makes a great Martini, with lime and a sugared rim. Your recipes are always yummy. Hope your having a great weekend!
